Planning Help: Meal One

It’s nice to have a meal where all the dishes complement one another. It simplifies my day by knowing what to eat with each dish. You don’t necessarily have to follow one meal plan. I can mix and match main dishes and sides but I often work in a hurry so don’t take too much time. I have several meals like this already, so when I find a new one to add to the mix I feel happy. It adds variety to our meal options – helpful hints.

I am happy to share my old and new meal ideas with you, in an attempt to answer your question “What’s for dinner?” Here’s a recipe that we’ve tried recently where the ingredients compliment each other well. While the foods aren’t exactly new, the flavors are.

Honey Barbecue Meatloaf

Ranch Mashed Potatoes

Your choice of vegetable

Apple Cinnamon Muffins and Honey Cinnamon butter

Make ahead tips: You can make the Honey Cinnamon Butter ahead and store it in the fridge until you’re ready to use. You can also make the meat loaf ahead and refrigerate it prior to baking.

The Recipes

Honey Barbecue Meat Loaf

While I don’t usually eat meat loaves, this one I love and so does my family.

1 envelop dry onion soup mix

1 egg

1/2 cup oats — quick cooking

1/3 cup barbecue sauce — honey flavored

1/4 cup chopped onion

2 tablespoons brown syrup

1 tablespoon Worcestershire sauce

1 tablespoon mustard — used in the preparation

1/2 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon of pepper

1/4 teaspoon chili powder

Ground Beef: 1 lb


Mix soup mix, egg whites, oats brown sugar, onion, Worcestershire sauce mustard, garlic powder salt, pepper, and chili powder in a large bowl. Mix well. Add the beef. Place the beef mixture in an 8-in. x 4-in. x 4 in. loaf pan. Bake at 350°F for 1 hour. Top with ketchup. Bake for another 5-10 mins or until meat is no more pink and a meat thermometer reads 160*. Let rest for 10 min before serving.
